SUPER-QUICK CHRISTMAS PUDDING
INGREDIENTS
100g cranberry sauce
2 tablespoons golden syrup
100g butter
100g dark brown sugar
100g plain flour
300g mixed dried fruit
2 eggs beaten
1 apple peeled & grated
1 tablespoon mixed spice
METHOD – Grease a 1.2 litre pudding basin. Mix cranberry sauce & golden syrup together and spoon two thirds into the base of the pudding basin. Beat together all remaining ingredients and spoon into prepared basin, pressing a large piece of baking parchment on to the pudding to cover surface. Microwave on medium power for 9 mins until firm. Leave to stand for 10 mins before turning out onto a plate, pour over remaining third of the cranberry mixture and serve with custard or cream.
